Sandwich Food Safety: Cold Holding, Deli Meat and Packed Lunches

General food-safety guidance for perishable fillings, deli meat, packed lunches, parties and leftovers.

Core US guidance: Keep cold food at 40°F (4°C) or below. Refrigerate perishable food within two hours, or within one hour when the air temperature is above 90°F (32°C).

Perishable sandwich fillings need temperature control

Meat, poultry, fish, eggs, many cheeses, cooked vegetables and prepared salads should not sit at room temperature for extended periods. Start with cold ingredients, use an insulated bag or cooler and return leftovers to refrigeration promptly.

Packed lunches

USDA guidance recommends an insulated lunch bag and at least two cold sources for perishable bag lunches, such as freezer packs or a frozen water bottle. Store the lunch in a refrigerator when one is available.

Deli meats and Listeria

Deli meats and other ready-to-eat deli foods can be contaminated with Listeria, and refrigeration does not kill it. CDC identifies pregnancy, age 65 or older and weakened immunity as higher-risk situations. People in those groups are advised to avoid deli meat or heat it to 165°F (74°C) or until steaming hot before eating. Individual medical needs should be discussed with a qualified health professional.

Prevent cross-contamination

  • Wash hands before food preparation and after handling raw meat or poultry.
  • Use clean boards and utensils for ready-to-eat bread and vegetables.
  • Keep juices from deli packages and raw ingredients away from other foods.
  • Clean refrigerator shelves and surfaces that contact leaking packages.
  • Use separate utensils and trays when allergen cross-contact is a concern.

Parties and picnics

Serve smaller platters and replenish from the refrigerator or cooler. Keep cold foods on ice when appropriate. Do not rely on appearance or smell to decide whether food held too warm for too long is safe.
